The True Story of True Dough

What do a corporate HR runaway and a full-time high school teacher have in common? They both love pizza night! Sisters Elizabeth Aarness and Rebecca Biederman have turned their love of pizza into a business, selling specialty “healthy” pizza doughs using local, organic food sources.

It all started when the sisters wanted to begin a family tradition of pizza night once a week with their children. However, the high cost of quality pizza or pizza layered in grease did not sound appealing. So the sisters worked together to create their own healthy pizzas at home.

Elizabeth and Rebecca began experimenting with healthy, creative options for the pizza dough. As the sisters started to perfect the pizza doughs, they began to give out their dough as gifts. People enjoyed the dough so much they started placing orders for more.

An interesting opportunity began to rise and the sisters chose to seize it. True Dough was launched and began selling at local farmers markets. Their four varieties of pizza dough (Original Style Pizza Dough, Italian Herb Style Pizza Dough, Spicy 3-Pepper Style Pizza Dough and Whole Grain Style Pizza Dough) along with two gluten-free flatbread options (Italian Herb & Roasted Garlic Gluten Free Flatbread and Gluten Free Flatbread) became loved by many. Customers began requesting True Dough at the local grocery store, Kowalski’s, and this lead to the beginning of True Dough’s products being available on store shelves.

True Dough has been steadily growing over the past four years since the business started up, and expects to continue growing at a steady pace. You can currently find True Dough’s products in the freezer section of approximately 200 stores, including Kowalski’s and Hy-Vee.

This will be True Dough’s second year participating in the Feast! Local Foods Marketplace event. After their incredible experience and outreach during last year’s festival, they are eager to participate once again this year.

As their business continues to grow, so does the relationship of the family as they continue to have a family pizza night every week with their children and teach them how to make pizza…the healthy way.

“The kids enjoy making their our own pizza and experimenting with whatever toppings there are in the fridge,” expressed Elizabeth.

I’ve tried store-bought pizza crust kits, and they taste store-bought. These True Dough crusts are the best of both worlds because they’re healthy AND delicious…oh, AND EASY!
